
The Search for the Perfect Christmas Cookie
Melting moments are delicious, easy to make cookies that really do melt in your mouth. I thought these would be perfect as a Christmas cookie, decorated with royal icing and some Christmassy sprinkles so I made a test batch.
What you’ll need:
1 cup cake flour
1⁄2 cup corn starch
1⁄2 cup powdered sugar (icing sugar)
1/2 tsp vanilla extract
3⁄4 cup butter, softened
Cream the butter until light and fluffy and then add vanilla extract. In a separate bowl, sift the flour, icing sugar and corn starch before adding to the creamed butter and mix thoroughly until combined.
Refrigerate for one hour. Preheat the oven to 150 degrees C/300 degrees F.
Shape into 1 inch balls (±2.5cm) and place on un-greased baking paper. Bake them for about 20 minutes or until the edges are starting to brown. Keep an eye on them, do not over bake.

*Tip – Do not decorate. Do not ruin them with any sort of icing or sprinkles. They are absolutely PERFECT just as they are.
