
Weekend breakfast at home is usually these quick and easy pancakes. They are the perfect vehicle for a variety of toppings and condiments, whether sweet or savoury.
With only a few ingredients you could whip these up in no time at all so there is absolutely no need to buy the ready-made mix!
What you’ll need:
1 cup cake flour
2 tsp baking powder
a pinch of salt
2 TBSP sugar
1 extra large egg
3/4 cups milk
1 TBSP melted butter
Sift the flour, baking powder and salt together then add the sugar. Beat the egg, milk and melted butter together and add to the dry ingredients.
Beat the mixture until you get a smooth, dropping consistency. If you have the time (and sometimes I don’t) allow the batter to stand for about thirty minutes. Take half a teaspoon of oil and just lightly coat the surface of the pan using some wax wrap or paper towel. Fry spoonfuls of the batter until golden brown, turning when bubbles appear on the surface. They only need about thirty seconds on the other side.
I love them smothered in butter but my kids prefer a generous smear of Nutella or Golden Syrup.
