Creamy Broccoli Linguine

While I am no slouch in the homemade pasta making department, this recipe is meant to be quick and requires minimal effort –  It’s all about the sauce and the quality of the shop-bought linguine!  You’ll only need a handful of ingredients and very little time. Perfect for those lazy days or weeknight suppers.

What you’ll need:

1/2 an onion

1 clove of garlic

1/2 tsp salt

50g butter

500g broccoli

1 cup water

1/4 cup grated Parmesan cheese

1/4 cup grated white cheddar

2 TBSP cream

200g linguine

Finely chop the onion and garlic and lightly fry in a pan until soft, set aside. Cut the broccoli florets into thin slices so that they steam quickly.  Add sliced broccoli, water, butter and salt to a pot and steam on high heat for about 4-5 minutes.  You want to preserve the vibrant green colour so don’t over cook.

Meanwhile, cook the linguine in salted boiling water, drain and set aside.

Remove from heat and add to a blender (or use a stick blender) along with onions, garlic and cheese.  Blend until the broccoli is smooth, then slowly add the cream and blend until completely mixed.

You might need to re-heat the sauce at this point, then add to the cooked linguine and chuck a bit more Parmesan on there because you can never have enough cheese.  You could of course take this dish to another level and top it off with some crispy onions, chopped herbs and a squeeze of lemon or charred broccoli bits!

Meat-free, easy and delicious!
