
Cauliflower purée made easy!
A purée is a wonderful thing. Easy to make and you can use whatever vegetables you have available. It can elevate any dish but is simple enough to make on any week night. Cauliflower is a great choice because it is so versatile and pairs well with most dishes.
This cauliflower purée is silky smooth and so easy to make! Give it a bash!
What you’ll need:
500g Cauliflower, about 1 medium head
100g Water
85g Butter
3.5g Salt
Step 1: Chop
Roughly chop the cauliflower into slices that are about 2-3mm thick.
Step 2: Steam
Place cauliflower, water, butter, and salt in a pot and cover with the lid. Begin heating on high to start steaming quickly, then reduce heat to medium and continue steaming until cauliflower is tender and there is little water left in the pot.
Be sure to check on your cauliflower every few minutes to prevent it from scorching.
Step 3: Blend
Add the cauliflower to a blender and begin blending. I use a jug and a stick blender but use whatever you have. Add a bit of lemon juice or stock if needed and blend until smooth. I use truffle oil which is super indulgent!
Step 4: Serve
